For me, there aren’t many things better for lunch than a grilled cheese sandwich. As a child, my grandma used to have a toasting machine, I would love to spend ages faffing making us both cheese toasties for lunch.
As an adult, a grilled cheese sandwich was something that I had not had for years until I was at a Christmas market and they were selling these.
Obviously, they were using bread and were not keto-friendly, however, it inspired me to create this ad home.
Almond flour on a keto lifestyle
The most popular and keto flour used by those following a keto/low carb lifestyle by far is almond flour. A 100g of almond flour contains 14g of fat 6g of protein and only 10g of carbs making it a good flour substitutes for a Keto lifestyle.
Almond flour is made from finely ground almonds, with their skins removed. In the UK almond flour can be found in most supermarkets. However, I have found that it can be quite expensive within the supermarkets and it can be found cheaper online especially but when bought in bulk.
Where to buy almond flour in the UK?
If you are shopping in the supermarket I have found that Aldi sells reasonably priced almond flour. It is in the home baking section (normally near the eggs) and it is priced around £1.25 for 150g, this is one of the cheapest I have found on the high street.
Occasionally there will be offers in the main supermarket chains on Whitworths ground almonds. At the normal price these are normally quite expensive, however, occasionally they will go on offer at three for £3.00, this is the perfect time to clear out the shelves and stock up your store cupboard!
The cheapest places to buy almond flour online in the UK
If you don’t have time to wait for offers in the supermarket, these RealFoodSource almond flours are the best I have found on the internet. They can be bought in different quantities and are a lot cheaper than buying in the supermarket.
What is Psyllium Husk?
Psyllium husk is an ingredient that regularly pops up in keto / low-carb recipes. It is nothing to be afraid of!
Psyllium is a form of fibre made from the husks of the Plantago ovata plant’s seeds; it is naturally high in fibre and low in carbs making it a great ingredient for us keto-ers! As the almond flour is quite moist, the psyllium husk when toasted will bring a nice ‘crunch’ to your grilled cheese sandwich.
Filling to your grilled cheese sandwich
Cheese isn’t the only filling for these amazing sandwiches. Use your imagination! Why not add some ham or even a bit of onion? That choice really is yours! I’ve put a few of my favourite combinations below;
Making your grilled cheese sandwich
For me, I throw all of the ingredients in my Nutribullet and blend them together. This ensures that the ingredients are fully combined and that there is plenty of air in the mixture.
Getting plenty of air into the mixture ensures that the batter is light and fluffy which makes it rise in the microwave and gives it that lovely bread-like texture. If you do not have a Nutribullet this can be done in any food processor or if necessary, with a hand whisk. If are using a hand whisk ensure that the mixture is well-whisked sell lots of air bubbles can be seen.
Keto grilled cheese sandwichCourse: Breakfast, Lunch & Dinner
For keto bread
3 tablespoons almond flour
2 tablespoons psyllium husk powder
1 teaspoon baking powder
20 grams butter melted
2 tablespoons olive oil
60 grams grated cheddar cheese
- For Bread
- Beat the eggs in NutriBullet or processor. Add all other ingredients to the eggs. Make sure that all the ingredients are properly combined.
- Take a microwave bowl and pour mixture in. Microwave for 2 minutes. Take out the bowl and flip over the almond bread on a plate. Cut into two pieces.
- For sandwich
- Heat butter in a frying pan
- Toast the ‘inside’ pieces of your bread until golden brown. Flip over.
- Add filling to one side of your bread and put the other slive on top (untoasted side out!)
- Cook on a medium heat for 2 minutes each side. Your cheese should be melted in the centre.
