This Keto-friendly, low-carb salad will definitely prove to you that salads are not ‘rabbit food’ and that they are not just meant for diets! This keto broccoli salad is full of flavour and great for lunches at home or at work – or even as a side to your main!

Do you ever get bored with salad for work? ?

For years I have taken salads to work for my lunch – I mix up the ‘main bit’ (the cheese, eggs, meat etc), but the repetition of lettuce, cucumber, celery and tomato can become a bit mundane.

That’s when I found this amazing broccoli salad and my mind was blown!!

This really was a game-changer for me. I can be pious that I am having salad for work  – with none of the monotony of a traditional salad.

Why you’re on any diet or eating lifestyle, the hardest bit of it for me is keeping things fresh. No, I don’t mean in the fridge!

Whenever I have done any diet before, I’ve always fallen into the routine of eating the same few foods over and over again.

It’s fine in the beginning, you’re normally on the ‘high’ of losing weight and feeling great so the monotony does not bother you.

However, three months in you are starting a campaign against whoever invented Muller yoghurts or Krisp Rolls and you never want to see another one in your life!

So how do you make Keto different?

I knew when I started a keto way of living that this had to be different for me. I could not get stuck in a rut of eating the same food and becoming bored and promptly falling off the wagon.

For those of you who have not read the story of how I started following a keto lifestyle; I spent over a year researching diets and nutrition and all associated topics before taking the leap.

Part of this research was not only the foods that I could eat – but more importantly, was spend compiling lists of recipes from around the internet and some of my own that were adaptations of non-keto foods that I currently love.

It was only with all of these recipes in my ‘tool kit’ that I felt ready to start my new keto life. I have only added to this recipe book over the years. Every time I travel, I try foods (yes some are none-keto), but in trying these I know what they taste like, and then I spend weeks, and sometimes months, when I get back home, experimenting and trying to make keto-friendly versions.

These are what we bring to you so you have a variety of meals and ideas to keep you on track.

How do I Steam my Broccoli?

If you’re not sure how to cook (steam) your broccoli for your salad? Don’t worry, it’s really simple.

You can steam your broccoli on the hob, or in the microwave.  If you are doing this in the microwave, place your broccoli into a microwave-safe bowl such as a Pyrex bowl. ♨️

Add a splash of water (around 1 tablespoon) to the bowl and cover with a silicone lid to keep the steam in.  Microwave on high for 4 minutes and then check to see if the stalks are tender.

If you are cooking your broccoli on the hob, fill a pan with boiling water and add your broccoli to the pan – cook for 8 minutes.

If you are cutting this recipe down or making additions to serve or save your cooking time will need to be adjusted accordingly

I have found, the best way to test if my broccoli is done is by cutting into one of the stalks with a sharp knife.  If the knife goes through without much resistance your broccoli is done. 

However, if you have to put effort into cutting through the broccoli stalk, then it is not ready yet.

Can I use Frozen Broccoli?

Again, as with most of my recipes, I try and make them as simple as possible for people with busy lives.

Yes, you can use frozen broccoli. You can cook it in either of the ways described above but you may need to slightly reduce your cooking (steaming) time. ❄️

⏱️Can I make this Keto Broccoli Salad in Advance? 

I will often make two portions of this on a Sunday for lunch at work on a Monday and Tuesday. This lasts fine in the fridge.

I store the broccoli salad and the dressing in two separate Lock and Lock containers.  I will put the dressing on when I am ready to eat the salad so that the broccoli does not go soggy.

Lock & Lock are airtight to make sure my broccoli stays crisp. This also means that the dressing does not leak into my work bag!

You can reheat your salad and then add the dressing or eat it cold. Both ways work really well!

TOP TIP: Let your broccoli cool before putting your lid on and storing it in the fridge. If you put your lid on whilst the broccoli is still warm it will ‘sweat’ and go soft in your lunch box!

Is shop-bought Mayo ok for my Keto Broccoli Salad?

Most shop-bought mayos are keto-friendly as long as they are full fat – just check out the nutritional value on the back.

Ingredients

  • 100 grams (1 cup) steamed broccoli florets

  • ½ teaspoon black salt

  • 60 grams grated cheddar cheese

  • 1 red onion sliced

  • 4 slices cooked and crumbled bacon (can be left out if you want this to be a vegetarian dish)

  • 30 grams (¼ cup) toasted and sliced almonds

  • For the dressing
  • 60 grams (1/4 cup) mayonnaise

  • 1 tablespoon apple cider vinegar

  • 2 teaspoons dijon mustard

  • ½ teaspoon black salt

  • 1 teaspoon finely ground black pepper

Directions

  • Take all the dressing ingredients in a small bowl and whisk properly. Make sure they mixed completely.
  • In a separate big bowl, add all the salad ingredients. Mix nicely. Now pour the salad dressing in the bowl and toss the salad mix with the dressing. Make sure the salad dressing coat all the salad mix.
